$25 per person for wine and food paring. Seating is limited, food available while supplies last.
The Cov, a Rancho Santa Fe winery, takes pride in honoring the soil while bringing the historic soul of Rancho Santa Fe to your glass. Winery owner, Jon Williams, will be on hand to share his passion for local winemaking. Williams and his wife, Tammy, speculatively planted 1,000 Bordeaux clones (cabernet sauvignon, merlot, cabernet franc) on their property more than a decade ago. To their delight, several experts they consulted found the fruit to be exceptional enough that the Williamses went on to launch their own wine label, The Cov (short for Covenant), in 2015.
Williams is also at the forefront of a grassroots campaign to bring local growers and vintners together to promote the unique characteristic of wine grapes grown in the Ranch. The recently formalized Vintners and Growers Association hopes to have the community participate in annual harvest and crush events, educate people about the benefits of having a vineyard, as well as to have Rancho Santa Fe designated as a unique American Viticultural Area (AVA).
Cork & Knife is proud to support local wineries, and to carry The Cov, 2014, on our shelves.
